Busy Weekend = Pepperoni Quiche

I haven't forgot about all of you guys I promise! I've been busy busy! Especially busy working, to put in perspective a little more, since Friday night at 6, I have been at that dang mall all but 3 hours of it being open, listening to Yo Gabba Gabba on the t.v. and kids peeing on the floor!

Seriously.I'm.Tired.Of.Working.

But isn't everyone? Luckily I'm off until Friday night and can get to the mounds of laundry I have laying around...its amazing how many clothes we go thru in a couple of days time! How did all of your weekends go? I'm just happy to be able to get a chance to actually get on here and blog! Another thing that makes me happy is that September 15th is rolling around and that means one thing for me-Halloween  decorations are being put up and I'm scaring the heck outta my kids this year! HEHEHEHEHE! I'm clapping now as I type this being the evil mom that I am! I hit up Target the day after Halloween last year when they put everything half off and bought so many decorations! Now I just have to go dig them all out of my garage, there's no telling where I stashed everything! On the downside of all this, we weren't able to have our pizza night this past weekend since I was gone BUT I did have time to make a Pepperoni Quiche! It sounds odd, I know, thats what I thought to when I came across this recipe. I love quiche but hubs being the picky weird eater he is, suprise, suprise, he doesnt like quiche! But since he loves pepperoni pizza I thought I might be brave enough and give it a shot. Well it worked, he actually LOVED it! I got the recipe from over at Lynn's Kitchen Adventures. She's got some wonderful recipes, you'll have to check her out! It's super easy to put together and the way I make mine is pretty much exactly like hers, I just used some generic brand ingriendients to make it a little cheaper. That was it so the credit for this recipe goes to her! Thanks Lynn! Here's the recipe, give it a shot for a weeknight quick meal!


Pepperoni Pizza Quiche

1 unbaked pie crust (9 inch, I used the Great Value brand that comes 2 in box)
8 ounces of shredded cheddar cheese
2 ounces of pepperoni (Pretty sure I used more though! I also used turkey pepperoni)
1 (12 oun) can evaporated milk (I used Great Value brand fat free evp. milk she used Carnation brand)
3 eggs, beaten
2 tbs flour
1 tsp dried basil
1/8 tsp garlic powder

Preheat oven to 350 degrees. Press your pie crust into your dish and sprinkle 1 cup of the cheese on the bottom of the crust and I covered the whole bottom over the cheese with pepperoni. Whisk together your eggs, can of evp. milk, flour, basil, and garlic powder. Pour it into your crust (the pepperoni will rise a bit but its okay it gets baked into the mix anyways!) Carefully top with your remaining cup of cheese and some more pepperoni on top. Bake for 45 minutes or until done. Let it cool for about 5-10 minutes.

It took me literally 5 mintues to make this! I needed something quick since I was getting ready for work and it was so nice just to throw it together, pop it in the oven and walk away. It's good leftover too! So if you want a change from pizza but still want the pizza taste, this is the one recipe you have to try!

  1. Oh my gosh! Pizza quiche! It's new to me and looks delicious. It is a must try! Sounds like your house will be awesome with lots of Halloween decorations. Have fun putting it all together and show us pics of it! Have a good week!
